Tomorrow is Easter and ARE YOU READY?!  What have you got planned? A lot of dinners? Chocolate egg hunts?  Sleeping in?  Well whatever it is you'll be getting into this weekend, enjoy yourself and be safe. I'll be attempting my first lemon bundt cake for my Easter celebrations and I thought I'd post the recipe.

Ingredients

Cake

• 2 1/4 cups (560 ml) unbleached all-purpose flour
• 1 teaspoon (5 ml) baking powder
• 1 teaspoon (5 ml) baking soda
• 1/4 teaspoon (1 ml) salt
• 3/4 cup (180 ml) unsalted butter, softened
• 1 3/4 cup (430 ml) sugar
• Grated zest of 2 lemons
• 3 eggs
• 1/2 cup (125 ml) freshly squeezed lemon juice
• 1/2 cup (125 ml) buttermilk (see note)

Icing

• 1 1/2 cups (375 ml) icing sugar, sifted
• 2 tablespoons (30 ml) lemon juice, approximately

Preparation

1. With the rack in the middle position, preheat the oven to 180 °C (350 °F). Generously butter and flour a 2.5 litres (10 cups) Bundt or tube cake pan.

Cake

2. In a bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
3. In another bowl, cream the butter, sugar, and lemon zest with an electric mixer. Add the eggs, one at a time, and beat until smooth. At low speed, add the dry ingredients alternately with the lemon juice and buttermilk.
4. Pour into the prepared pan and bake for about 45 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool. Unmould from the pan and cool completely on a wire rack. Set aside on a baking sheet.

Icing

5. In a bowl, combine the icing sugar and lemon juice. If necessary, add a little juice or icing sugar so that the frosting is just runny. Pour over the cooled cake so that the glaze drips over the sides.

Just a bit of info...

This instagram image sparked a bit of controversy over the last weekend.  It's difficult to know how people feel about decor choices but as one disgruntled follower commented, we started to think that maybe some of you were also wondering.  We are an Eco-friendly hair salon.  We never said ever that we were vegans/vegetarians.  We never once said that we don't eat meat.  What we have said is that we are a full service hair salon with an Eco-friendly edge.  Cow hide rugs are in fact very Eco-friendly.

It did cross my mind while I was purchasing the rugs, that maybe some people would take offense.  What I didn't anticipate, was an individual going to great lengths to slag our business because of decor choices.  I welcome any criticism about the service we provide or the experience you receive when you come into our shop.  That I can deal with.  But when someone can insinuate that we are liars because of a choice I made in decorating my shop, it makes me want to clear the air.

Cow hide rugs are great because no part of the cow is wasted and the process that the hides go through are way less abrasive than the process of manufacturing carpets or other types of material rugs.  Material rugs also CANNOT last a lifetime like the hide rugs can so  that means you are having to purchase them over and over.  They carry dirt and dander and can be stained with any type of food or beverage.  The hides are hair and therefore cannot be stained and are easy to clean.

Hair trends for men 2015 The bald fades, tight tapers and undercuts/disconnected looks are still out there!  This spring/summer, look to grow out the sides and back a bit.  Less clipper work and a little more scissor work.  Edges are left longer and softer.  In my opinion, I love an unfinished look as much as a crisp tight cut.  Length on top allows for more playfulness.
